In this new section of the Black Hammer newsletter we will be introducing you to some healthy, delicious, affordable meals from all around the world. None of that unseasoned BS here.

 

Easy Vegan Potato Curry
This easy vegan potato curry is perfect for a comforting lunch or dinner. We know you all work so hard, and of course we are extremely tired after our colonial jobs that we just want to feed ourselves and/or our families something quick and delicious.
This meal can be ready in less than 30 minutes!

Cost

($17 to $20 including all spices that you can save for other meals)
Ingredients

(Serving of 4) 

Produce

  • 2 cloves Garlic minced
  • 1/2 Onion, large chopped
  • 4 small chopped Potatoes
  • 1 cup Spinach
  • 5 oz Tomatoes, fresh

Canned Goods

  • 1 can Coconut milk
  • 1 tbsp Tomato paste
  • 1 cup of green peas  

 

Pasta & Grains

  • 1 cup Rice or Quinoa

Spices

  • 1 tbsp Curry powder
  • 1 tsp Garam masala
  • 1 Salt and pepper
  • 1 tsp Turmeric

 


Instructions: 

 

  1. Add the garlic and onion to a non-stick saucepan and sauté for 2-3 minutes, until fragrant. Add a splash of water if it starts to stick, to keep this recipe oil-free. Then, add the tomato paste and sauté for 1 minute more to coat. 
  2. Add the fresh tomatoes and press them down gently. Cook, stirring occasionally, for 2-3 minutes, until the tomatoes start to release their juices. 
  3. Add the potatoes, coconut milk, curry powder, turmeric and garam masala. Bring to a simmer, cover and cook on a low-medium heat, stirring occasionally, for around 15 minutes, or until the potatoes are fork-tender. 
  4. At the last minute, stir in the spinach and green peas, cooking until the spinach has wilted. Season to taste with salt and pepper and serve over a bed of rice of your choice or quinoa!
